Tom's Chipotle Dipping Sauce

Ingredients

• 1/2 cup sour cream
• 1/2 cup mayonnaise
• 1-2 chipotle peppers in adobe sauce
• 1/2-1 teaspoon Celia's Chipotle Pepper hot sauce OR Chipotle Garlic EVOO
• 1/4 cup roasted red bell pepper
• 1/4 cup chopped cilantro
• 1 clove garlic, chopped
• juice of 1/2 lime
• pinch of Kosher salt

Directions

1. Place all the ingredients for the sauce in the bowl of a food processor or blender; purée until smooth. The sauce can be made up to two days ahead and kept in an airtight container in the refrigerator. Serve with shrimp or your favorite chips!
