Mama Celia's Gourmet Lasagna

Ingredients

Directions

  1. Cook spinach, drain well
  2. Cook noodles, drain
  3. In large skillet brown beef, garlic and onion.
  4. Drain grease from skillet, add tomato sauce, tomato paste, and water. stir well.
  5. Add mushrooms & liquid, stir in remaining seasonings, mix well.
  6. Simmer for about 30 minutes to blend flavors.
  7. In small bowl combine egg, spinach, cottage cheese & 1/3 cup mozzarella.
  8. In a 9x12 baking dish pour 1/3 third meat sauce, cover with a layer of noodles. Spread 1/2 the spinach mixture over noodles. Cover with another layer of noodles, pour 1/3 more of the meat over noodles, cover with another layer of noodles, then pour the rest of the spinach mixture over this layer of noodles. Top with another layer of noodles, pour remaining meat sauce over noodles. Top with the mozzarella cheese and then sprinkle with the chopped parsley.
  9. Bake at 350 for 30-45 minutes until hot, let stand for 5 minutes before serving. Drizzle balsamic on plate, set a piece of lasagna and then add another drizzle of balsamic over the top.
