Martha's Tomato - Lentil Stew

Ingredients

Directions

  1. Saute first 5 ingredients over med. Heat about 10 minutes, until vegetables are tender. Stir occasionally.
  2. Add all remaining ingredients except balsamic and Bring to boil.
  3. Simmer about 30 minutes until lentils are done
  4. Stir in balsamic vinegar.
  5. Serve. Add salt, pepper, and more Balsamic vinegar to taste.
  6. Top with crumbled Feta cheese.
